On this occasion I served it with raspberries, but you can serve it with strawberries, blueberries or a mixture of fruits of this style. Also a good alternative would be to make a berry sauce, the combination would be atomic.
I’m sure you’ll ask me if it’s okay to use regular yogurt, and the answer is yes. You can use natural or vanilla yogurt, but if you use Greek yogurt the consistency and texture will be much firmer and more delicious.
Why Bake with Yogurt?
Yogurt is not just a healthy snack โ itโs also a fantastic ingredient in baking. Hereโs why:
1. Moisture
Yogurt adds a rich moisture to cakes without making them dense or oily. This is especially important in simple cakes like yogurt cake where thereโs no heavy frosting or filling.
2. Tender Texture
The acidity in yogurt breaks down gluten in flour, resulting in a tender, soft crumb.
3. Flavor Balance
Yogurt brings a slight tang that balances sweetness beautifully. It pairs well with citrus, vanilla, berries, and nuts.
4. Healthier Option
Using yogurt allows you to reduce the amount of fat in a recipe, as it can replace butter or oil in part. It also adds protein and probiotics.
Tips for the Perfect Yogurt Cake
Even though this cake is very forgiving, a few tips can elevate it from good to unforgettable.
โ Use room temperature ingredients
This helps everything blend more smoothly and evenly, resulting in a consistent crumb.
โ Donโt overmix
Once you add the dry ingredients, mix just until incorporated. Overmixing develops gluten, which makes the cake tough.
โ Use whole milk yogurt
It provides the best texture and flavor. Low-fat can work, but you may notice a slightly drier cake.
โ Line your pan
Always use parchment paper for easy removal and a clean finish.
โ Let it rest
Yogurt cake actually tastes better a few hours after baking, once the flavors have had time to settle.
