Paleo pumpkin cake

FOR THE CAKE:

  • ½ cup of melted coconut oil
  • ¼ cup of maple syrup
  • ¼ cup of brown sugar
  • 1 cup of pumpkin puree
  • 4 eggs
  • 1 cup of almond flour
  • ½ cup of oatmeal
  • ¼ teaspoon of baking soda
  • ½ teaspoon of ground cinnamon
  • ½ teaspoon of salt

FOR THE CRUMBLE:

  • ¼ cup of oatmeal
  • ½ cup of rolled oats
  • ½ cup of almond flour
  • 2 tablespoons of maple syrup
  • 2 tablespoons of coconut oil

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a mixing bowl or by using a blender, unite the maple syrup with the sugar. Add the pumpkin puree.
  3. Then add the eggs one by one.
  4. Then add the dry ingredients (flour, almonds and oats, baking soda, cinnamon and salt)
  5. Mix everything well.
  6. Prepare the crumble by mixing all its ingredients.
  7. In a mold, such as that shown in the picture, put some cooking spray.
  8. Place the crumble evenly distributed in the bottom, and then pour the cake mix on top of it.
  9. Bake for 40 minutes.
