<span class=\"hps\">The fillings<\/span> <span class=\"hps\">can be varied to your liking<\/span>, <span class=\"hps\">but the mix<\/span> <span class=\"hps\">I present in<\/span> <span class=\"hps\">this recipe<\/span> <span class=\"hps\">is by far the<\/span> <span class=\"hps\">most<\/span> liked <span class=\"hps\">among all my<\/span> <span class=\"hps\">friends<\/span>.<br \/>\n<span class=\"hps\">In regards to the cakes<\/span> <span class=\"hps\">on <\/span><span class=\"hps\">the second and third<\/span> <span class=\"hps\">photos below,<\/span> <span class=\"hps\">I<\/span> made them a <span class=\"hps\">long time ago<\/span> <span class=\"hps\">when I<\/span> <span class=\"hps\">was visiting<\/span> <span class=\"hps\">some<\/span> <span class=\"hps\">friends<\/span> in their <span class=\"hps\">house<\/span>, <span class=\"hps\">so that&#8217;s why<\/span> <span class=\"hps\">the type of photo<\/span> <span class=\"hps\">and <\/span><span class=\"hps\">d\u00e9cor have lower quality.<\/span><\/p>\n<div><a href=\"http:\/\/www.midiariodecocina.com\/wp-content\/uploads\/2007\/10\/to11.jpg\"><img decoding=\"async\" class=\"hps\">3 tablespoons<\/span> of <span class=\"hps\">sifted flour<\/span><\/li>\n<li><span class=\"hps\">3 tablespoons<\/span> of <span class=\"hps\">cornstarch<\/span> <span class=\"hps\">or<\/span> <span class=\"hps\">potato starch<\/span><\/li>\n<li><span class=\"hps\">6 eggs<\/span><\/li>\n<li><span class=\"hps\">1 teaspoon<\/span> of <span class=\"hps\">baking powder<\/span><\/li>\n<li><span class=\"hps\">1 cup<\/span> of <span class=\"hps\">granulated sugar<\/span><\/li>\n<li><span class=\"hps\">3 tablespoons of water<\/span><\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">INGREDIENTS FOR THE CHOCOLATE SPONGE CAKE BASE:<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"hps\">3 tablespoons<\/span> of <span class=\"hps\">sifted flour<\/span><\/li>\n<li><span class=\"hps\">3 tablespoons<\/span> of <span class=\"hps\">cornstarch<\/span> <span class=\"hps\">or<\/span> <span class=\"hps\">potato starch<\/span><\/li>\n<li><span class=\"hps\">2 tablespoons<\/span> of <span class=\"hps\">sweet or bitter<\/span> <span class=\"hps\">chocolate powder<\/span><\/li>\n<li><span class=\"hps\">6 eggs<\/span><\/li>\n<li><span class=\"hps\">1 teaspoon<\/span> of <span class=\"hps\">baking powder<\/span><\/li>\n<li><span class=\"hps\">1 cup<\/span> of <span class=\"hps\">granulated sugar<\/span><\/li>\n<li><span class=\"hps\">5 tablespoons<\/span> of <span class=\"hps\">water<\/span><\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">INGREDIENTS FOR THE CAKE&#8217;S FILLING:<\/span><\/strong><\/p>\n<ul>\n<li><span class=\"hps\">1 can<\/span> of <span class=\"hps atn\">pineapple (you may <\/span><span class=\"hps\">replace<\/span> with <span class=\"hps\">canned peaches<\/span>)<\/li>\n<li><span class=\"hps\">\u00be<\/span> <span class=\"hps\">kg (26 oz) <\/span><span class=\"hps\">of<\/span> <span class=\"hps\">dulce de leche (milk caramel)<\/span><\/li>\n<li><span class=\"hps\">1 liter of<\/span> <span class=\"hps\">whipping cream<\/span><\/li>\n<li><span class=\"hps\">1 cup of water<\/span><\/li>\n<li><span class=\"hps\">1 tablespoon<\/span> of <span class=\"hps\">granulated sugar<\/span><\/li>\n<li><span class=\"hps\">1 pinch of<\/span> <span class=\"hps\">pisco<\/span> (grapes spirit) <span class=\"hps\">or white<\/span> <span class=\"hps atn\">liquor (<\/span>optional)<\/li>\n<li><span class=\"hps\">Grated coconut<\/span> <span class=\"hps\">or<\/span> <span class=\"hps\">chocolate<\/span> <span class=\"hps\">chips<\/span><\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">PREPARATION:<\/span><\/strong><br \/>\n<strong>WHITE SPONGE CAKE BASE:<\/strong> <span class=\"hps\">in a bowl,<\/span> energetically <span class=\"hps\">beat the egg whites<\/span> <span class=\"hps\">of<\/span> <span class=\"hps\">6 eggs<\/span>, and in a separate bowl beat <span class=\"hps\">the <\/span><span class=\"hps\">yolks<\/span>. <span class=\"hps\">When<\/span> the egg <span class=\"hps\">whites get <\/span><span class=\"hps\">stiff,<\/span> <span class=\"hps\">add the sugar.<\/span> <span class=\"hps\">Then<\/span> add the stirred yolks, and <span class=\"hps\">stir some<\/span> <span class=\"hps\">more<\/span>.<br \/>\n<span class=\"hps\">Then, on a plate,<\/span>\u00a0<span class=\"hps\">sift<\/span> <span class=\"hps\">the flour<\/span><span class=\"hps\">,<\/span> <span class=\"hps\">cornstarch<\/span>, and <span class=\"hps\">baking powder<\/span> al<span class=\"hps\">together,<\/span> and pour these ingredients into the previous mix one spoonful at a time, besides of using a wooden spoon to keep folding the dough until everything has been integrated well, along with the 3 tablespoons of water.<br \/>\n<span class=\"hps\">Then<\/span> <span class=\"hps\">place <\/span>the dough into a <span class=\"hps\">buttered<\/span> <span class=\"hps\">mold<\/span> <span class=\"hps\">of about 22<\/span> <span class=\"hps\">cms (9 in) long.\u00a0<\/span><span class=\"hps\">Bake on a <\/span><span class=\"hps\">moderate heat <\/span><span class=\"hps\">for about<\/span> <span class=\"hps\">35 minutes<\/span>, <span class=\"hps\">depending on the oven<\/span>.<\/p>\n<p><strong>CHOCOLATE SPONGE class=\"hps\">depending on the oven<\/span>.<\/p>\n<p><strong><br \/>\n<span style=\"text-decoration: underline;\">FILLING:<\/span><\/strong><\/p>\n<p><span class=\"hps\">Mix<\/span> the <span class=\"hps\">pineapple juice<\/span> <span class=\"hps\">with the water<\/span>, sugar <span class=\"hps\">and a pinch of<\/span> <span class=\"hps\">pisco<\/span> <span class=\"hps\">or white<\/span> <span class=\"hps\">liquor.<\/span><br \/>\n<span class=\"hps\">Once<\/span> <span class=\"hps\">the sponge cakes <\/span><span class=\"hps\">cool down<\/span>, <span class=\"hps\">carefully<\/span> <span class=\"hps\">divide<\/span> them <span class=\"hps\">in two, cutting along their widths (to prepare the sponge cake layers).<\/span><br \/>\n<span class=\"hps\">On<\/span> <span class=\"hps\">a large<\/span> <span class=\"hps\">plate, place the first chocolate sponge cake layer, and moisten it <\/span><span class=\"hps\">with the pineapple-water juice <\/span><span class=\"hps\">to obtain the desired<\/span> <span class=\"hps\">humidity.<\/span><br \/>\n<span class=\"hps\">Spread <\/span><span class=\"hps\">a generous layer of<\/span> <span class=\"hps\">dulce de leche (milk caramel) on top of the cake layer.<\/span><br \/>\n<span class=\"hps\">Then add <\/span>a layer <span class=\"hps\">of <\/span><span class=\"hps\">white<\/span> sponge <span class=\"hps\">cake<\/span>, moisten it with the pineapple-water <span class=\"hps\">juice as well, <\/span><span class=\"hps\">spread <\/span><span class=\"hps\">whipped cream<\/span> on top, and then add <span class=\"hps\">chunks of<\/span> <span class=\"hps\">pineapple<\/span> <span class=\"hps\">all around<\/span>.<br \/>\n<span class=\"hps\">Then<\/span> <span class=\"hps\">add the<\/span> <span class=\"hps\">other <\/span><span class=\"hps\">chocolate cake layer<\/span>, moisten it with the pineapple-water <span class=\"hps\">juice,<\/span> <span class=\"hps\">and top it with<\/span> <span class=\"hps\">a generous<\/span> <span class=\"hps\">layer of<\/span> <span class=\"hps\">dulce de leche.<\/span><br \/>\n<span class=\"hps\">Finally,<\/span> <span class=\"hps\">add <\/span><span class=\"hps\">the other <\/span><span class=\"hps\">white<\/span> <span class=\"hps\">cake layer<\/span>, moisten it with pineapple-water juice, and <span class=\"hps\">cover<\/span> <span class=\"hps\">the entire<\/span> <span class=\"hps\">cake<\/span> <span class=\"hps\">with whipped<\/span> <span class=\"hps\">cream,<\/span> making sure to even the cream out on the cake, <span class=\"hps\">especially<\/span> <span class=\"hps\">on the sides<\/span>.<br \/>\n<span class=\"hps\">Garnish<\/span> <span class=\"hps\">the sides<\/span> <span class=\"hps\">with grated<\/span> <span class=\"hps\">coconut or<\/span> <span class=\"hps\">chocolate shavings<\/span>.<br \/>\n<span class=\"hps\">On the top, <\/span><span class=\"hps\">garnish with<\/span> <span class=\"hps\">pineapple chunks<\/span> <span class=\"hps\">and<\/span> <span class=\"hps\">dulce de leche.<\/span><\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>This
